Native to the Middle East, almond tree has spread throughout the Mediterranean Basin since Antiquity, but the most extensive almond plantations can now be found in California.
In Europe, Spain is the largest producer of almonds.
Almond trees blossom very early in the spring, in the Mediterranean Basin, usually as early as February, so bees are still weak after the winter period. Weather conditions are also often adverse to beekeeping, i.e. cold and rainy. Hence, we can easily understand that almond honey is rather rare, it cannot be harvested every year. Unlike other fruit trees, which can be pollinated by the wind, almond can only be pollinated by bees, otherwise it does not bear fruit.
Over time, almond honey crystallizes into fine crystals, becoming lighter in colour (it tends to turn light brown to beige).
