Asphodel is a Mediterranean plant. The genus comprises several species, the most widespread of which is the branched asphodel (Asphodelus ramosus). It blooms from March to May. In Sardinia and Sicily it grows in areas large enough to produce monofloral asphodel honey.
Asphodel honey crystallizes coarsely, relatively quickly. It has a very fragrant, vanilla-like aroma and a very pleasant, floral taste. It is a much rarer type of honey than other Mediterranean honeys.
