Unlike most citrus fruits, which are used for their juice or pulp, cedrate (like bergamot) is used for its peel. Either in the kitchen (for preserves) or in the cosmetics industry. It is the largest citrus fruit, can reach up to 3 kg. There are many varieties of citrus, some of which are spectacular (‘Buddha’s hand’, for instance).
In Europe, South of mainland Italy and Sicily has groves of cedrate trees, and therefore also the right conditions to produce a monofloral honey from cedrate blossoms. However, this honey is much rarer than types obtained from other citrus trees.
Cedrate honey is fragrant, floral, with the characteristic smell of citrus blossoms. It resembles orange blossom honey, but is less intense. It is dark yellow/orange and remains liquid for a long time.
