Common holly, English holly, or simply ‘holly’ is the only species of the genus Ilex that grows wild in Europe. It grows mainly in temperate Europe, predominantly in the West, often in oak and beech forests. It is cultivated as a Christmas plant, as it is a very beautiful shrub with intense green leaves and bright red berries.
Holly honey is very floral, with a pleasant smell and a rather mild taste. It has a bitter aftertaste, which is however much less intense than the one of the chestnut honey, for instance. It remains liquid for a long time, with a yellow-orange colour.
