Fruit tree honey is a multifloral spring honey, obtained in temperate zones of Europe, Russia and North America. It is one of the first honeys of the season. Besides fruit trees, April-May also comes with the blossoming of flowers (the most common being dandelion), which bees inevitably stop at, so they too, in varying proportions, make their mark on this type of honey.
It is not a very common honey, as fruit trees bloom in early spring, when weather conditions are often unfavourable; or when beekeepers prefer to leave the first honey harvests for the bees to consume.
The taste, smell, colour, texture, speed of crystallization of fruit tree honey – they all depend on the variation in the combination of trees’ blossoms; or on which species are predominant in a particular honey batch. In general lines though, this type of honey is one with a very pleasant, light, spring-like smell and taste. It tends to crystallize quickly, as glucose content is high, related to the fructose.
