There are over 30 species of lime (basswood), the most widespread in Europe being Tilia cordata and Tilia platypyllos. They grow wild in deciduous forests or are cultivated for their fragrance and therapeutic properties.

Together with black locust honey, lime honey is the most widespread type of European monofloral honeys. It is produced throughout temperate Europe, from East to West, from Ukraine and Moldova, to France. It can also be found in some Mediterranean countries, but in smaller quantities. It is also very common in Russia and the USA.

Lime honey is one of the most fragrant honeys in the temperate Europe, so it is highly appreciated by those who prefer intense honeys. Silver lime (Tilia tomentosa) gives the most fragrant variety of lime honey.
