Although linden trees usually produce honeydew (due to insects that feed on leaf sap), linden honeydew honey is rare because the period when honeydew occurs comes just after the inflorescence fades, partially overlapping with it and competing with other nectar sources abundant during this period.

Unlike other honeydew honeys, linden honeydew honey crystallizes over time, taking on a creamy, unctuous texture. This honey type is rather unusual for the temperate zone of Europe, and closer to some tropical honeys. It has a toffee taste and an intense, lingering aftertaste.
