“Meadow honey” is a generic name for honey harvested in hill areas of the Northern hemisphere, on pastures with abundant summer (July-August) flora. It is perhaps the most common multifloral honey in mild temperate climate areas, from Russia to Western Europe and large areas of the USA.
It is a very nice honey, full of floral flavours, with a creamy texture that makes it slightly spreadable. It ranges in colour from light to dark yellow.
Here are some of the melliferous species it contains: sweet yellow clover (Melilotus officinalis), yarrow (Achillea millefolium), lemon balm (Melissa officinalis), St. John’s wort (Hypericum perforatum), chamomile (Matricaria recutita), marshmallow (Althaea officinalis), wild thyme (Thymus serpyllum).
