Raspberry Honey

TEXTURE: Crystallizes relatively quickly

Raspberry honey can be obtained either in areas where raspberry bushes grow wild, in proximity of the forests, in which case the concentration of raspberry nectar and pollen is quite low and the honey is multifloral, rather than monofloral; or in large raspberry plantations, where there is few competing flora, and therefore the concentration of raspberry pollen and nectar is high.

Either way, we should not expect raspberry honey to taste like raspberries, because the raspberry blossom has a very mild odour, with no direct connection with the raspberry flavour.
