Monofloral hawthorn honey is hard to obtain, only once every few years, as this shrub grows wild, in hard-to-access areas (together with many other wild bushes). On the other hand, hawthorn blossoms in April-May, when weather conditions are often unfavourable (rainy, cold) and when competing flora is abundant.

It is a honey with a discreet, slightly bitter flavour, provided there is a high enough concentration of hawthorn nectar.
