There are about 800-900 species of eucalyptus, native to Australia and islands at the North of it. Dozens of species have been introduced to many other parts of the world, including Europe (especially the Mediterranean Basin), where Eucalyptus globulus (blossoms in fall) and Eucalyptus camaldulensis (blossoms in summer) are most common.

Depending on the species of eucalyptus, the organoleptic properties of the honey obtained from the flowers of these trees can be slightly or even very different.

In Mediterranean countries, eucalyptus honey tends to be less dark in colour (red-orange) than on other continents. When crystallized, the colour turns lighter. It is an aromatic, woody, fragrant honey with a slightly minty aftertaste.
