There are several hundred species of the genus Thymus (thyme), many of which are widespread in the Mediterranean basin. The thyme honey from Crete is a real national and local symbol, but it comes from a different species than the one obtained on hill and mountain pastures of Romania.

Wild thyme honey is produced in small, almost experimental quantities in Romania. It has a specific, strong flavour, a long-lasting liquid texture and high viscosity.
