Avocado is native to what is now Guatemala and southern Mexico (Mesoamerica) and was domesticated over 5,000 years ago, although traces of its use have been found as far as 10,000 years.

Today, Mexico is the world’s largest avocado producer (accounting for over a quarter of the world production); whereas Spain is Europe’s largest producer, with plantations concentrated mainly in Andalusia, where Spanish avocado honey is produced.

Avocado honey is very dark in colour, almost black, remaining liquid for a very long time due to its high fructose content. It has an intense, resin-like taste and aroma. It has a specific smell, strong and intense.
