Sunflowers are one of the most important melliferous sources in Europe, thanks to the vast fields cultivated with this oilseed plant. It is harvested practically all around temperate Europe, from East to West, from Ukraine and Moldova, to France. It is also found in a few Mediterranean countries, but in smaller quantities. In Greece it is found only in the North; whilst in Turkey only in Thrace province. It is also a common honey in Russia and the USA.

It crystallizes coarsely and, once crystallized, sunflower honey has an even more intense colour than in its liquid state: a bright, golden yellow. The flavour of the crystallized version is also more intense than in liquid state.
