Ivy flowers very late in the fall (September-November). We can see it everywhere, it can grow wild, but is often grown decoratively or for shade. When wrapped around trees, it can damage them.

Ivy honey is obtained only occasionally, once every few years, because autumn weather conditions are often not favourable for the bee’s forage (rain and cold). Due of its very high glucose content (approx. 80%) compared to fructose (approx. 6%), it crystallizes very quickly in the hive, making it difficult to extract. It also has high humidity, which is difficult to correct.

Ivy honey has a specific smell and a long-lasting taste. The aroma is floral-herbal, minty. Its colour is also special, greenish-brown.
