Alfalfa originates from Persia, but has been acclimatized in very large areas of the temperate world, especially as a fodder plant, as it contains a high percentage of protein. It is a plant which efficiently fixes nitrogen in the soil, naturally fertilizing it. The USA and Australia are the biggest alfalfa producers.

Alfalfa honey crystallizes quickly, very finely, turning to a creamy texture. It has a mild smell and is very pleasant to taste, very floral, slightly minty.
