‘Spring honey’ is a generic name for multifloral types of honey produced in lowland areas of temperate Europe, with hundreds of species of melliferous plants flowering from March to May. In Romania and Russia, it is mostly called ‘May honey’.

Depending on the area where the hives are installed, it comes in many subtypes, still the common feature is that it is a very pleasant, fragrant honey, coming from a wide variety of flowers: from fruit trees to rapeseed and black locust.

In addition to the above species, here are some plants that flower in springtime in lowland areas: Tatar maple (Acer tataricum), field mapple (Acer campestre), goat willow (Salix caprea), winter vetch (Vicia villosa), alfalfa (Medicago sativa), the red clover (Trifolium pratense), dandelion (Taraxacum officinale).
