There are several species of thyme, growing wild or cultivated. Mediterranean species love arid soils and warm climates. Savory of Crete (Satureja thymbra) has a strong flavour and is used all around the Middle East for the popular spice za’atar.

While Mediterranean thyme honey is the most popular type of honey in Greece, savory of Crete monofloral honey is much rarer. It is a honey with a specific aroma, slightly different from the thyme one, and a strong taste. It is very fragrant. Just like Mediterranean thyme honey, it crystallizes very slowly and has a high viscosity.

Savory of Crete honey is produced on the Island of Crete.
