There are several species of thyme, wild or cultivated. Mediterranean species love arid soils and a warm climate. In spring, semi-arid highlands of the Mediterranean basin are a colourful carpet of wild thyme, ranging from pink to purple.

Mediteranean thyme honey is Greece’s best-known type of honey, a real national symbol. Crete, Cyclades Islands, and Sporades Islands are major producers of thyme honey (the predominant species here is Thymus capitatus). It is a honey with a specific aroma, a strong taste. It is very fragrant when the concentration of thyme nectar is high. It crystallizes very slowly and has a strong viscosity.

Thyme honey is produced in many parts of the Mediterranean basin, based on various species. Here are some of them: Thymus longiflorus (Spania), Thymus carnosus (Portugalia), Thymus vulgaris (Turkey, Lebanon).
