Fruit trees bloom early in the spring, and the cherry tree is no exception. This is why cherry blossom honey is quite rare on the market, as several conditions are needed in order to harvest enough monofloral honey to be put on the market:
– in early spring there must be favourable weather conditions, i.e. no rain and warm enough (above 12-13˚C) for the bees fly and forage;
– there must be enough cherry orchards to ensure that the honey has a high concentration of cherry blossom nectar, which makes it a monofloral honey.

Usually, the first honey harvests in early spring are left for the bees to feed themselves, because winter weaken them. This is why it is necessary a large amount of honey to make it available for sale.

Cherry blossom honey is an exquisite type of honey. It is fruity and more fragrant than honey from other European fruit trees. It remains liquid for a long time.
