Giant fennel (Ferula communis) is a plant of the Apiaceae family, related to the common fennel (Foeniculum vulgare) planted for its bulbs and found in groceries. Anethole is a chemical compound found in this plant, as in anise and fennel.
This compound, anethole, is also found in giant fennel monofloral honey. It is a rare, coarsely crystallizing honey with a relatively intense, distinctive smell and taste.
In Eastern Mediterranean (Turkey, Syria, Lebanon) we can also find a closely related species, Ferula elaeochytris.
