Forest honey is a honeydew honey that is harvested from several deciduous species throughout temperate Europe and the Mediterranean Basin, depending on the area where the beehives are placed. It can also contain floral (nectar) honey, but in small proportions.

This honeydew honey is less fragrant and viscous than other honeys, sweet to very sweet, with a slightly sour aftertaste.
