Eryngium creticum is a plant of the family Apiaceae, growing on poor soils around Eastern Mediterranean. It produces blue flowers which are pollinated by insects. The fields where it grows are often difficult for access, which means that honey from this type of thistle is produced in small quantities.
Field eryngo honey is very fragrant, with a slightly harsh, spicy odour and taste. When liquid it has a high viscosity. It crystallizes coarsely.
